The Story Behind Sweet Lucy’s Pies

Lindsey Lawing started Sweet Lucy’s Pies in 2013, baking out of her home under Texas’ Cottage Food Law and selling at farmer’s markets and pop-ups around Fort Worth. For a decade she built a following with her signature flaky crust, local Texas ingredients, and a willingness to put whiskey in things that had no business being improved. Then they got improved anyway.

In March 2023, she opened her first brick-and-mortar on Bluebonnet Circle. The shop is named after my niece, Lucy.

Before the doors even opened, she made room for her sister. Jodi Maria, who runs Fort Worth Cookie Gal, uses the same commercial kitchen and shares the retail floor. The lemon bar recipe behind Jodi’s Pink Lemonade Cookie traces back to our grandmother, passed down through our mother, Gerri Lawing.

Gerri was diagnosed with Stage 4 breast cancer in 2022. She passed away in December 2024, after two and a half years of fighting. Jodi is working toward launching a nonprofit called “The Big C Word,” focused on supporting women with late-stage cancer.

Every visit to this shop carries that weight, and that warmth. These are family who show up for each other, and they put that into the food.

Lindsey sources ingredients seasonally from Texas producers, so the menu rotates. Sweet Lucy’s Pies is that kind of Fort Worth bakery, not the kind that runs the same twelve flavors forever. But the salted honey has been a staple year after year.

You get actual smokiness from it, balanced against the creaminess of the caramel and a soft, creamy center that makes you pay attention to what you’re eating. Smoky, sweet, rich, and somehow not too much of any one thing.
